DirectionsTrim rind of brie cheese top and bottom using a sharp paring knife. Cut into slices small enough to fit sweet potato medallions. Set aside. Preheat oven 400°F (204°C). Cut sweet potatoes into ¼ inch medallions. Place on a lightly sprayed tin foil lined pan single layer. Drizzle with olive oil and season with salt and pepper (both sides). Bake at 400°F for 10 minutes per side. Remove from oven and flip potato medallions over. Top with shredded cheddar cheese, chopped bacon and chives. Return to oven for 3-5 minutes until cheese is melted. Place on a serving tray and serve with sour cream or chipotle dip.
