Ingredients  

Salad

1 lb  pasta - cooked (gluten-free) (454 g)

1 (341 ml) can sweet corn - drained/ rinsed (349 g)

1 (127 ml) can green chilies (124 g)

1 (398 ml) can black beans - drained/ rinsed

¼ large red bell pepper - diced (41 g)

1 cup cherry tomatoes - quartered (121 g)

3 green onions -   chopped  (28 g)

Optional: fresh jalapeno - sliced

Taco Beef

1 lb lean ground beef (454 g)

2 tsp chili powder (6 g)

2 tsp ground cumin (4 g)

½ tsp paprika (2 g)

½ tsp salt (2 g)

½ tsp black pepper (1 g)

½ tsp crushed red pepper flakes (3 g)

¼ tsp garlic powder (1 g)

¼ tsp onion powder (1 g)

¼ tsp dried oregano (1 g)

Dressing

½ cup mayonnaise (120 g)

1 cup sour cream 14% (250 g)

1 cup salsa (gluten-free)

(280 g)

1 tbsp fresh lemon juice (10 g)

2 tsp chili powder (6 g)

2 tsp ground cumin (4 g)

½ tsp salt (2 g)

1 tsp black pepper (2 g)

Directions

Taco Beef

  1. Combine all spices together in a small bowl. Mix until combined.
  2. In a medium skillet, cook hamburger until ¾ cooked. Add spice mixture and continue cooking until thoroughly cooked (160°F/71°C).
  3. Remove from heat and let cool. Set aside.

Dressing

  1. In a medium bowl, combine all ingredients and refrigerate for 4 hours.

Assembly

  1. In a large bowl combine cooked pasta, veggies and cooked Taco Beef. Refrigerate until ready to serve.
  2. Prior to serving, add dressing.
  3. Garnish with fresh sliced jalapeno if desired.

Tips & Variations

  • For best results add chilled dressing to salad prior to serving.
