    Ingredients  

    Raspberry Vinaigrette Dressing 

    2 cups frozen raspberries (280 g) 
    ½ cup extra virgin olive oil (100 g)
    ¼ cup red wine vinaigrette (54 g)   
    2 tbsp red onion – minced (22 g)
    ½ tbsp Dijon mustard (8 g) 
    ½ tsp black pepper (1 g)
    ½ tsp salt (2 g) 

    Homemade Croutons 

    1 Loaf Kinnikinnick White Bread - cut into 1inch cubes (454 g)

    1 tbsp garlic powder (5 g) 

    2 tbsp dry parsley flakes (3 g) 

    ½ tsp salt (2 g) 

    1 tsp black pepper (2 g) 

    1 tbsp olive oil (15 g)

    Mixed Berry and Arugula Salad

    ½ cup Homemade Croutons 
    75 g arugula
    ½ cup strawberries – stems removed/quartered (85 g) 
    ½ cup raspberries (70 g) 
    ½ cup blueberries (75 g) 
    30 g crumbled goat cheese 
    ¼ medium red onion – thinly sliced (70 g)

    Directions

    Raspberry Vinaigrette Dressing

    1. Blend all ingredients together in a food processor or blender for 1 minute.
    2. Strain through a cheesecloth or sieve to remove seeds.
    3. Refrigerate until ready to use.
    4. Shake well prior to using.
    5. Raspberry Vinaigrette Dressing can be stored in the refrigerator for up to 2 weeks.

    Homemade Croutons 

    1. Preheat oven to 350°F (176°C). Line a baking tray with parchment. Set aside. 
    2. Toss bread cubes with garlic, parsley salt and pepper until coated.
    3. Spread herbed cubed bread evenly on pan. Drizzle with olive oil. 
    4. Bake at 350°F (176°C) for 10 minutes, turning bread cubes once in oven.
    5. Turn oven off. Leave pan of herbed bread cubes in oven for 10 minutes.
    6. Remove from oven and let cool and dry overnight.
    7. Store Homemade Croutons in an airtight container for up to 2 weeks.

    Mixed Berry and Arugula Salad

    1. Build individual salads with arugula and top with fresh berries, crumbled goat cheese and sliced red onion.
    2. Top with Homemade Croutons.
    3. Drizzle with Raspberry Vinaigrette Dressing. 
      Yields 4 individual portions
