Ingredients  

Cake

  • 1pkg Kinnikinnick White Cake Mix (500g)

  • 1pkg Kinnikinnick Gingersnap Cookies (broken medium to fine pieces) (190g)

  • 4 eggs (240g)

  • 1 cup cold water (237g)

  • ¾ cup vegetable oil (163g)

  • 1 tsp vanilla extract (5g)

  • 3 pears (peeled, cored and diced) (555g)

Optional Ginger Cinnamon Drizzle

  • 2 cups icing sugar (240g)

  • 2tbsp water (30g)

  • ¼ tsp ground ginger (1g)

  • ½ tsp cinnamon (2g)



Directions (Cake)

Preheat oven to 325°F (162°C). Generously grease Bundt pan. Mix until combined eggs, oil, water and vanilla. Add Kinnikinnick White Cake Mix. Mix until just incorporated. Fold in broken cookies and pear. Mix just until incorporated. Pour into prepared cake pan, bake for 60-70 minutes. Cool then invert onto serving plate.

 

Yields: 1 cake /Serves 12

 

 

Directions (Ginger Cinnamon Drizzle)

In a small bowl combine icing sugar, cinnamon and ginger. Slowly add water while continuing to stir until desired thickness. Drizzle over cooled cake.


 

Tips & Variations

Colour and texture is dependent on how fine your gingersnap cookie crumbs are.
