Ingredients

2 lb sweet potatoes (908 g)

3 tbsp olive oil (45 g)

½ tsp salt (2 g)

1 tsp black pepper (2 g)

1 wheel brie cheese (170 g)

½ cup pomegranate seeds (70 g)

3 tbsp liquid honey (45 g)

Directions

Sweet Potato

  1. Preheat oven 400°F (204°C). Line a baking tray with foil and lightly spray or grease. Set aside. 
  2. Cut sweet potatoes into ¼ inch medallions.
  3. Place on foil lined pan single layer.
  4. Drizzle with olive oil and season with salt and pepper (both sides).
  5. Bake in preheated oven for 10 minutes per side.

Assembly 

  1. Trim rind of brie cheese top and bottom using a sharp paring knife.
  2. Cut into slices small enough to fit Sweet Potato Medallions. Set aside .
  3. Remove Sweet Potato Medallions from oven and top each with a brie cheese slice.
  4. Return to oven for 2 - 3 minutes until cheese is melted. 
  5. Remove from oven and top with pomegranate seeds.
  6. Place on a serving tray and drizzle with honey.
  7. Serve warm


Tips & Variations

  • Use small tubular sweet potatoes- no wider than 2 inches in diameter.
