Ingredients

4 pork loin chops - bone in (1190 g)

¼ cup + 2 tbsp Kinnikinnick All Purpose Flour Blend  - reserve 2 tbsp (80 g)

½ tsp salt (2 g)

2 tsp pepper  (4 g)

4 tbsp olive oil  - reserve 2 tbsp (60 g)

1 cup chicken stock (gluten-free) (240 g)

3 garlic cloves - minced (7 g)

2 sprigs thyme -  stem removed/chopped (6 g)

4 green onions - thinly sliced (28 g)

200 g cremini mushrooms -  sliced

200 g white mushrooms - sliced

¼ cup sour cream 14% (50 g)

Optional: garnish with fresh parsley 

Gluten-free pork mushroom gravy

Directions

Pork Chops 

  1. Preheat oven to 350°F (176°C). Lightly grease a 2.5 quart casserole dish. Set aside.
  2. Salt and pepper pork chops. Coat seasoned pork chops in ¼ cup Kinnikinnick All Purpose Flour Blend. Set aside.
  3. Heat 2 tablespoons olive oil in a large skillet over medium heat.
  4. In two batches, cook coated pork chops medium well (12 - 15 minutes per side depending on thickness) or an internal temperature of 155°F (68°C).
  5. Remove Pork Chops from pan and place in casserole dish.
Gluten-free Pork in Mushroom Gravy

Mushroom Gravy 

  1. Add reserved 2 tablespoons olive oil to skillet and sauté mushrooms until tender (7 - 10 minutes).
  2. Stir in reserved 2 tablespoons Kinnikinnick All Purpose Flour Blend until mushrooms are completely coated with flour.
  3. Add garlic, thyme, green onions and chicken stock.
  4. Bring to a boil over medium heat, stirring occasionally (7 - 10 minutes). Cook until liquid reduces and thickens slightly.
  5. Add sour cream and stir until combined.

Assembly 

  1. Remove Mushroom Gravy and pour over Pork Chops.
  2. Bake in preheated oven for 40 minutes.
  3. Garnish with optional fresh parsley
  4. Serve with your favourite side dish.

Yields 4 servings 


Tips & Variations

  • Pork Chops and Mushroom Gravy can be made ahead of time and cooked in the oven prior to serving.
  • Add 10 minutes to oven time if cooking from cold state.
