Ingredients

Potato Salad

1½ lbs baby potatoes - cut in half or quartered (681 g)

1½ cups sweet corn (341 ml)

2 celery sticks - chopped (80 g)

3 cloves garlic - whole (10 g)

3 tbsp olive oil (36 g)

1 tsp garlic powder (2 g)

½ tsp salt (2 g)

1 tsp black pepper (2 g)

½ lb bacon - cooked/ chopped (227 g)

Optional: garnish with chives

Homemade Dressing

½ cup mayonnaise (120 g)

½ cup sour cream 14% (120 g)

1 tbsp lemon juice (10 g)

¼ cup fresh dill - stems removed/chopped fine (2 g)

⅓ cup Parmesan cheese - grated (50 g)

½ tsp salt (2 g)

1 tsp black pepper (2 g)

Optional: 2 tbsp melted butter (30 g)

Directions

Homemade Dressing

  1. In a medium bowl, combine all dressing ingredients except optional melted butter. Refrigerate for 1 hour.

Potato Salad

  1.  Preheat oven to 400°F (204°C). Line a baking tray with parchment paper and set aside.
  2. In a medium bowl toss baby potatoes, corn, celery, garlic cloves, garlic powder, salt, pepper and olive oil.
  3. Place mixture on baking tray and bake in preheated oven for 10 - 15 minutes.
  4. Flip mixture in oven and bake for an additional 10 minutes or until potatoes are tender and slightly crisp.
  5. Remove from oven and let cool for 10 minutes.
  6. Remove garlic cloves and finely mince, set aside.
  7. Place Potato Salad in a serving bowl. 
  8. Slowly add optional melted butter to Homemade Dressing. Mix until combined. 
  9. Toss Potato Salad in Homemade Dressing. 
  10. Add chopped bacon and minced roasted garlic to mixture. Mix until combined.
  11. Top with fresh chopped chives.
  12. Best served warm.


 

Tips & Variations

  • Dressing can be made in advance and stored in the refrigerator for up to 2 days. Add optional melted butter prior to serving.
