Ingredients

  • 1½ lbs stewing beef (cubed) (681g)

  • ¼ cup Kinnikinnick All Purpose Flour Blend (50g)

  • 1 tsp black pepper (2g)

  • ½ tsp salt (2g)

  • 2tbsp olive oil (30g)

  • 1 medium white onion (chopped) (268g)

  • 3 cups baby potatoes (cut in ½) (680g)

  • 3 celery sticks (chopped) (90g)

  • 3 medium carrots (chopped) (150g)

  • 2 cups parsnips (chopped) (266g)

  • 3 bay leaves (1g)

  • 2 cups beef stock (480g)

  • 1tbsp worcestershire (15g)

  • 1tbsp fresh thyme (stems removed/chopped fine) (3g)

  • 2 cloves garlic (minced) (7g)

  • 1can tomato paste (170g)

  • Garnish with fresh parsley



Directions

Coat beef with Kinnikinnick All Purpose Flour Blend, salt and pepper. Heat 2tbsp olive oil in a medium skillet and cook beef until ¾ cooked (approx. 15 minutes). Set aside.


In a 6qt slow cooker, combine beef stock, worcestershire, thyme, garlic and tomato paste. Stir until combined. Add prepared beef, vegetables and bay leaves. Mix together and cover. Cook on high for 5-6 hours until beef is tender and vegetables are cooked. Stir occasionally throughout the cooking process. Serves 8 people
