Ingredients 

Pasta

340 g pasta- cooked (gluten-free)

2 celery sticks - diced (60 g)

1 medium red bell pepper - chopped (144 g)

3 medium sized carrots - peeled/diced (190 g)

½ English cucumber - peeled/diced (240 g)

3 medium radishes - diced (65 g)

Sauce

⅓ cup granulated sugar (76 g)

⅓ cup ketchup (104 g)

⅓ cup white vinegar (85 g)

2 tsp Dijon mustard (14 g)

1 tsp salt (2 g)

1 tsp black pepper (1 g)

Directions

Sauce

  1. In a medium bowl, combine sauce ingredients and whisk together. Set aside.

Assembly

  1. Add prepared vegetables except radishes to cooled pasta (radish colour may bleed slightly, best if added just before serving).
  2. Add prepared sauce and toss until evenly coated.
  3. For best results refrigerate for 3 - 4 hours prior to serving.

Tips & Variations

  • Use gluten-free elbow macaroni or similar size pasta
  • For picnics, load a jar with all the ingredients. Take, shake, serve.
