Heat 2 tbsp olive oil in a medium skillet, sauté onion, garlic, mushrooms, salt and pepper until tender and reduced. Add prepared bacon and season to taste. Cook for 3-5 minutes. Set aside.
Bread Cups and Assembly
Preheat oven to 375°F. Spray mini muffin tins with non-stick spray and set aside. With a rolling pin, carefully flatten slices of Kinnikinnick Soft Whole Grain Bread. Cut each slice into two circles. Form bread circles into muffin cups and brush with 1tbsp olive oil.
Bake for 10-12 minutes or until crisp and lightly golden. Place a piece of cream cheese into base of warm cup and fill with ½ tbsp. filling into each prepared cup. Return to oven and Bake for 7-10 minutes at 375°F or until golden brown. Serve warm. Makes 24 appetizers.
Tips & Variations
These freeze great! Fill toast cups with filling and freeze prior to cooking. Add 3-5 minutes to cooking time if cooking from frozen state.
