Preheat oven to 375°F (190°C). Place prepared shells on a cookie sheet and bake for 7 minutes. Remove from oven, place ½ the crumbled bacon and sliced tomatoes in the bottom of each prepared cup. Set aside.
In a medium pot of boiling water, blanche spinach for 1 minute. Rinse in cold water and drain well.
In a blender or food processor combine prepared spinach, 2tbsp chives, ricotta cheese, egg, salt, pepper and cream. Pulse just until pureed. Fill each prepared cup with mixture and top with remaining chives and bacon.
Bake at 375°F (190°C) for 15-18 minutes. Yields: 6 individual Florentine Quiche

- We used 6 flan pans with a removable bottom (4”x7.5”)
