Ingredients  

White Cake

1 package Kinnikinnick White Cake Mix (500 g)
4 large eggs (224 g)
¾ cup water (160 g)
¾ cup vegetable oil (115 g)

Banana Foster 

2 tbsp butter (30 g)
2 tbsp rum or vanilla extract (20 g)
½ cup granulated sugar (102 g)
3 large bananas - sliced (402 g)

Toppings

1 package Kinnikinnick Vanilla Wafers (180 g) 
2 cups vanilla pudding - instant or homemade (500 g) 
2 cups whipping cream 33% - whipped (500 g)
Optional: dried banana chips and crushed Kinnikinnick Vanilla Wafers for decorating 


Directions

White Cake 

  1. Preheat oven to 350°F (176°C). Lightly spray 9 x 13 glass cake pan. Set aside.
  2. In a medium bowl combine eggs, oil and water. Mix until combined.
  3. Add Kinnikinnick White Cake Mix and mix until combined.
  4. Pour batter into cake pan and spread evenly.
  5. Bake in preheated oven for 25 - 30 minutes (cake will spring back to the touch when done).
  6. Remove from oven and let cool. 

Banana Foster 

Note: Do not make this filling ahead of time. It needs to be made right before required in assembly stage.

  1. In a large skillet melt butter.
  2. Sprinkle melted butter with granulated sugar and rum or vanilla extract.
  3. Nestle banana slices on sugar in a single layer.
  4. Cook over medium-low heat until sugar caramelizes and bananas begin to brown (approx. 7 - 10 minutes).
  5. Using a fork, carefully flip bananas once and continue cooking until sugar is a light golden brown. 

Assembly

  1. Using the handle of a wooden spoon, poke holes in the base of the white cake.
  2. Spread vanilla pudding evenly over cake base.
  3. Top vanilla pudding with a single layer of Kinnikinnick Vanilla Wafers (flat side up).
  4. Prepare Banana Foster at this stage. Spread warm Banana Foster over top of Kinnikinnick Vanilla Wafers. Use a wet pallet knife to help spread.
  5. Let Banana Foster layer cool completely.
  6. Top cooled Banana Foster layer with whipped cream.
  7. Decorate with optional crushed Kinnikinnick Vanilla Wafers and dried banana chips. 

Yields 1 cake


Tips & Variations

  • Try our Vanilla Custard recipe available on this website instead of vanilla pudding. 
  • We suggest you use a glass cake pan so you can see the layers.
