1 medium sweet onion (240 g) 2 tbsp olive oil (30 g) ½ tsp cayenne pepper (1 g) ½ tsp salt (2 g) ½ tsp ground black pepper (1 g) ½ cup sour cream 14% (125 g) ½ cup mayonnaise (125 g) 4 oz cream cheese (125 g)
Directions
Cut onion in half and thinly slice. Set aside.
In a medium skillet heat olive oil. Add cut onion and sauté over medium heat until soft (approx. 10 minutes).
Add spices to onion and continue to cook over medium-low heat until onion begins to caramelize (approx. 15 minutes).
Remove from heat and let cool slightly.
Using a knife or food processor, finally chop cooked onions (careful not to puree).
In a medium bowl beat cream cheese until smooth, scraping down during mixing. Add sour cream and mayonnaise. Continue to mix until smooth.
Fold cooked onion into cream cheese mixture. Mix until combined.
For best flavour, refrigerate for 1 hour before serving.
