S’moreables® Cheesecake Bars

Ingredients  

Crumb Base

1 package Kinnikinnick Graham Crumbs (300 g) 
5 tbsp soft butter (75 g)


Ganache Drizzle 

100 g dark chocolate 70% 
120 g cream 33% 


Cheesecake Filling

3 (8oz) packages cream cheese (750 g)
¾ cup granulated sugar (125 g)
3 large eggs (168 g)
1 tsp vanilla extract (5 g)
8 oz semi-sweet chocolate (225 g)
1 cup miniature marshmallows (gluten-free) (56 g)  

Decorations 

8 individual Kinnikinnick S’moreables®  - broken into pieces (128 g) 
1 cup miniature marshmallows (gluten-free) (56 g) 
Optional: chocolate pieces 

Directions

Crumb Base

  1. Line a 9 x 13 pan with foil (leave extra at top to help remove from pan). Lightly grease and set aside. 
  2. Using your hands or a pastry knife, combine Kinnikinnick Graham Crumbs and hard butter. Mix just until combined.
  3. Press Crumb Base into bottom and slightly up sides of lined 9 x 13 pan. Set aside.

Cheesecake Filling

  1. Preheat oven to 325°F (162°C).
  2. Melt semi-sweet chocolate and let cool. Set aside.
  3. In a medium bowl beat cream cheese until smooth, scraping down sides of bowl in between mixing (approx. 5 - 7 minutes).
  4. Add granulated sugar and mix until smooth.
  5. Beat in eggs one at a time, scraping down bowl after each addition.
  6. Slowly add vanilla and cooled melted chocolate to creamed mixture. Mix just until combined.
  7. Fold in miniature marshmallows. 
  8. Pour Cheesecake Filling over Graham Base and spread evenly.
  9. Place a pan ½ filled with water on bottom oven baking rack (to create steam in oven).
  10. Bake S'moreables® Cheesecake Bar on middle oven rack in preheated oven for 40 minutes (no peaking).
  11. Cool for 15 minutes before cooling in refrigerator for minimum 4 hours or overnight.

Ganache Drizzle (make prior to using)

  1. In a medium saucepan heat cream until just prior to boiling point.
  2. Remove from heat and pour over chopped chocolate.
  3. Stir until melted. Let cool slightly.

Decorating 

  1. Remove S’moreables® Cheesecake Bars from refrigerator.
  2. Use foil to lift out of 9 x 13 pan. Remove foil and cut into 20 squares.
  3. Drizzle with cooled Chocolate Ganache.
  4. Decorate with broken Kinnikinnick S’moreables® pieces and miniature marshmallows.
  5. Add optional chocolate pieces for a finishing touch.
