Ingredients

  • 2 cups water

  • 1/4-1/2 tsp. dried chili flakes

  • 1/4 - 1 tsp. cayenne pepper

  • 1 cup whole quinoa

  • 1/4 tsp. garlic powder

  • 1/2 cup canned corn

  • 1/4 tsp. cumin

  • 4 sundried tomatoes finely chopped

  • Salt and pepper to taste

 


Directions

Combine all ingredients in a pot and stir together. Bring to a boil, reduce heat and cover.


Simmer for 20 minutes over medium-low heat or until water has evaporated.


Serve hot with a touch of butter.



Tips & Variations

  • Adjust the amount of heat by varying the amount of cayenne and chili flakes you use.
  • Meal Idea: Serve with Pepper Jack Chicken Cordon Bleu and Mango Cilantro Salsa
