Ingredients

6 large eggs - yolks only  (102 g)

¾ cup granulated sugar (150 g)

⅓ cup corn starch (50 g)

⅛ tsp salt (1 g)

3 cups milk 2% (720 g)

1½ tsp vanilla extract (7 g)

6 prepared pie flans - flaky pie dough recipe (300 g)

Optional: fresh berries and whipped cream for decoration



Directions

Vanilla Custard 

  1. Place egg yolks in a bowl and whisk until combined. Set aside.
  2. In a medium saucepan combine milk, sugar, salt and cornstarch. Cook over medium heat, stirring constantly, until mixture begins to thicken and comes to a boil (12 - 15 minutes). Remove from heat.
  3. Slowly whisk the hot milk mixture into egg yolks. Gradually pour hot mixture back into sauce pan, stirring constantly.
  4. Cook over medium- low heat stirring continually until mixture thickens and begins to bubble (approx. 6 - 8 minutes).
  5. Remove from heat and stir in vanilla.

Flans 

  1. Prepare Flaky Pie Dough and form into flans.
  2. Preheat oven to 375°F (190°C). Place prepared Flan Shells on baking tray.
  3. Pierce bottom of Flan Shells with a fork to prevent air pocket from forming.
  4. Bake in preheated oven  for 12 - 15 minutes.
  5. Remove Flan Shells from oven and cool slightly.

Assembly 

  1. Fill cooled Flan Shells with Vanilla Custard Filling.
  2. Let set in refrigerator for at least 2 hour.
  3. Top with optional fresh fruit and whipping cream.

Yields 6 flans


 

Tips & Variations

  • Remember when tempering eggs it is important to always add hot to cold never cold to hot.
  • Recipe for Flaky Pie Dough available on this website using Kinnikinnick All Purpose Flour Blend. We used 6 flan pans 4” X 7.5”
