Pepper Jack Chicken Cordon Bleu

Ingredients  

  • 4 chicken breasts (flattened to about ¼ inch thick)

  • 1/4 cup sweet rice flour

  • 2 eggs (beaten)

  • 3/4 cup of Kinnikinnick Panko Style Bread Crumbs

  • 3 tbsp. vegetable oil

  • 100g shaved Old Fashion Ham

  • 1 cup shredded Pepper Jack cheese


Directions

Coat chicken according to recipe on back of Panko Bread Crumb box.

Preheat vegetable oil in a medium skillet, pan fry each chicken breast for 2-3 minutes per side or until golden brown, set on a baking sheet. Preheat oven to 375°F.


Top each breast with old fashion ham and sprinkle with pepper jack cheese.


Place the chicken in the oven until the cheese is melted and the chicken has finished cooking, about 7-10 minutes.



 

Tips & Variations

  • Preparation Tip: Pound chicken flat between sheet of plastic wrap.
  • Meal Idea: Serve with Mango Cilantro Salsa and Santa Fe Quinoa. This recipe also works great as a chicken burger with a touch of chipotle mayo!
